Story Behind the Curve
Through composting, food waste can be used to feed and nourish the soil, grow the next generation of crops, and improve water quality. The University of Dayton (UD) and the Dayton Foodbank both have robust composting programs.
Since its inception in 2009, UD has diverted several tons of food waste from going to the landfill. Not only do the 3 largest dining facilities send their food waste to the on-campus composter, but a student-run composting program also distributes and picks up 5-gallon buckets of food waste throughout student neighborhoods for composting. This Neighborhood Composting Program has grown from 20 houses to nearly 100 and continues to expand.
Like UD, the Foodbank composts food waste to be reused in their large greenhouse. They also manage a Compost Bucket Program in which any community member can participate.
